Lavender Sugar

I love using dried flowers in food and drink to enhance both the taste and the visual presentation, making what I prepare a little more special. Homemade lavender sugar is easy to make and adds a floral sweetness to any favorite beverage,baked goods or sprinkle on summer stone fruit.

I recently foraged English lavender from my sister's gorgeous garden to make a batch—just make sure the lavender is organic, pesticide-free, and from a reliable source. I used about a 1/4 cup of dried lavender to one cup of sugar - this will yield a strong and very floral sugar base. I placed the two ingredients in a small food processor and pulsed until the lavender was pulverized with the sugar. Just a few pulses will do. You can go bold or keep it subtle by adjusting the sugar for a less intense floral taste. I then divided the fragrant sugar into small, food-safe containers, finished wrapping them with a pretty string and a sprig of lavender. These make lovely homemade gifts for family, friends or dinner guests. Lavender sugar can be stored in an airtight container for up to six months.

TIP- Make sure the container of the food processor is completely dry or the sugar will clump! Use only English lavender for these recipes.

Some suggestions for you:

  • Add to whipping cream.

  • Use sugar to rim a cocktail glass.

  • Add to room temperature butter, mix and spread on a scone or toast.

Make it stand out

Lavender Simple Syrup

Combine equal parts sugar and water in a small or medium saucepan. Bring mixture to a boil while stirring until the sugar has dissolved. Remove from heat and allow the mixture to cool. Add to your favorite cocktail or summer beverage.
